IS YOUR MEAT EVER FROZEN?
All of the meat we buy, with the exception of certain exotic items shipped from all over the world, are delivered fresh in our stores up to six days per week.
WHERE DOES YOUR MEAT COME FROM?
We source some of our beef, veal, pork, lamb, and poultry from regional farms! However, due to the demand for particular cuts versus local supply chains, we do look elsewhere for much of our meat. We source only all-natural products, raised in a humane manner, both hormone and steroid free and finished with non-GMO grain.
IS YOUR MEAT GRASS FED?
Our beef is grass fed and non-GMO grain or corn finished based on grade and protein. All USDA graded beef goes through a finishing process which is designed to boost weight and interconnective fat or marbling in the muscle. Prime being the greatest amount of marbling, Choice being the second and Select being the bottom grade.
IS YOUR MEAT ORGANIC?
The meats we carry are not certified organic. However, we do carry meats that are “organically raised” from local farms. We strive to provide a wholesome, natural product, free of antibiotics and artificial hormones, while avoiding the hefty price tag associated with USDA Organic meat.
IS YOUR BEEF ANGUS CATTLE?
Originally from Scotland, Angus, a breed made popular by its size and heartiness to survive in many types of climate is a heavily utilized breed in the meat industry and the most popular breed in the US. Often times Angus is interbred with other types of breeds to increase size and yield. In fact, it must only be 51% Angus to receive an Angus certification. Though Angus cattle are the most popular they may yield both high- and low-quality beef depending on USDA grade. While some retailers focus on branding specific breeds of cattle, at PRIMAL we lean toward maintaining a standard of excellence in quality for our product. Some of the breeds of cattle we sell are Angus, Hereford, Charolais, Simmental and Wagyu to name a few. Regardless of breed, we only buy and sell premium USDA Choice grade and USDA Prime grade beef.
WHY IS YOUR MEAT SO GOOD?
The quality process starts with the selection of only products, brands, and vendors that follow certain criteria that we at Primal deem best practices for the best quality and flavor. Beginning with fresh, all-natural product. Our red meats are always aged before we even receive them. This gives us a much more tender and flavorful cut than an unaged product, regardless of the USDA grade, would produce. Unaged meat or “Green Meat” is often utilized at your local big box grocery store and is often times significantly cheaper given that no aging process has been done. All of our poultry is air chilled as opposed to water chilled. The air chill process allows the product to maintain its natural moisture yielding a much more tender and juicy finish after cooking. All of our butchers receive one on one training and are walked through Primal’s Butcher Training Program. They are trained to cut, process, and prepare the product correctly to maximize flavor and tenderness. As we only carry premium lines of product and nothing is frozen, the end result is a tasty product that showcases its natural flavors.
HOW DO I SPECIAL ORDER? WHAT’S AVAILABLE?
There are many cuts of meat – and varieties of meat available to consumers. Maybe you have a recipe you want to try, or there is a specialty/exotic meat that seems intriguing – like kangaroo, turtle, rattlesnake, alligator, or elk. Whatever the case, give us a call or stop by to speak with one of our butchers to check on availability of products. If we do not have the product in stock, we can special order most products up to six days per week in some cases. Depending on the nature of the special orders, we may require a deposit.
CAN I BUY YOUR MARINADES?
Our proprietary marinades are not for sale at this time.
DO YOU WHOLESALE?
Wholesale is taken on a case-by-case basis. However, if you have a large party or are planning a big purchase, we would love to work with you to provide any and all assistance you may need. Additionally, we have a “MEAT PACK” menu with some of our favorite items bundled together in larger packages at a discount. See the store manager for more information.
