Corned Beef Recipe
(Feeds 6-8)

4-6lb Brisket (Feeds 6 to 8 people)
2 large onions quartered
3 russet potatoes cubed
6 peeled/chopped carrots
8 whole cloves of garlic
4 ribs of celery
1 quart of beef stock
2 cups water
10 whole peppercorns
2 large bay leaves
1-2 cans your favorite dark beer

Rinse corned beef and place in large roasting pan or stock pot with all ingredients including liquids. Cover with aluminum and roast in oven at 325 degrees for 35-40 minutes a pound. Remove aluminum foil 1 hour before finished to allow for extra browning. When finished, remove corned beef and allow to rest for 30 minutes before slicing. (Beef should easily pull apart when finished.)
